Attack of the Poppy-seeds

I've got a YUMMY DE-LISH EASY recipe to share with you!  
But first I must warn you to beware of the poppy-seeds ;-)


I was craving this Creamy Chicken Casserole dish from Southern Living, so I set off to make it.  It takes about 10 minutes to prep, 30 to bake & if I'm saying it's easy, then you know it's EASY!

Combine:

 3 cups cooked, cubed chicken
1 (10 3/4 oz.) can cream of chicken soup, undiluted
1 (8 0z.) carton sour cream
1 Tb poppy seeds

Spoon these 4 ingredients into a lightly greased 11x 7 x 1 1/2 in. baking dish.

Then combine 1 1/2 cups (about 40) crushed buttery (Ritz) crackers & 1/4 cup melted butter or margarine, and sprinkle over top.

Bake uncovered @ 350 degrees for 30 minutes

This makes about 4 servings and my kids even loved it, mmm!  And you can even substitute low fat sour cream to make it a bit healthier.

So on with the poppyseed story.  As I'm measuring out the poppy-seeds, I decided to take the whole lid off & those crazy little boogers decided to hop out of the container and do a little jig all over my countertop and kitchen floor.  It was funny for about a second until I realized that I forgot to turn the spinner off of my wonderful vacuum, and the seeds went shooting across the kitchen floor making 10 times the amount of mess I had made in the first place!

Needless to say, I couldn't cook and clean at the same time!  So, my sweet husband took over cooking duty while I cleaned the floor...and then we all gobbled up every last bit of the dish!

Then we admired our daughters, while they put on a magic show, white gloves and all!  I'm wondering if they can make mommy disappear...only to be found on a beach somewhere with a Margarita in hand & not cleaning up poppy-seeds?  Who's with me?

P.S. I finally figured out how to get the Navigation bar (up there) up and running!  Please give me your feedback on how the overall bloggy looks!  I promise, I can take constructive criticism well :-)  I've still got a few things I'd like to change around, but...it's a work in progress.  I've looked at html code ALL WEEKEND and my eyes are blurry.  Trying to teach myself this stuff is not easy, hehe.  I used the 'Tips for New Bloggers' blog for a lot of coding questions and it's been a really helpful site, so check it out if you can.  I also have a small little button over on the bottom of my right sidebar for future reference.
